Coffee BBQ Sauce

Recipe

  • 1 cup ketchup
  • 1/2 cup water
  • 1/4 cup finely chopped shallot
  • 1/4 apple cider vinegar or white
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon celery seed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup coffee espresso grounds

Method

Add all ingredients to a medium-size pot and simmer down to gravy-like consistency. Chef Tip!  To get a bolder coffee flavor, heat the grounds prior to adding all ingredients to the pot.

Roasted Vegetables

Recipe

  • 4 large carrots, washed, skin on
  • 3 large parsnips, washed, skin on
  • half head of cauliflower, cut into florets
  • 8 large Brussel sprouts, halved
  • 2 large shallots, quartered
  • 4 sprigs broccolini, left whole
  • 4 large garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon sea salt
  • 1 teaspoon cracked pepper

Method

Combine all vegetables in a large mixing bowl and combine olive oil, salt, pepper, and chili powder.  Roast at 375 degrees for 15 mins depending on oven.

Pan Seared New York

Recipe

  • 2 New York striploin
  • 1/4 cup chopped parsley
  • 4 garlic cloves, minced
  • 1 shallot, minced
  • 1 teaspoon chili powder
  • 1 teaspoon sea salt
  • 1 teaspoon cracked pepper
  • 1/4 cup fine grated parmesan cheese
  • 1 sprig rosemary, minced
  • 1/4 cup butter

Method

Heat skillet on medium heat, add olive oil, place New York in pan and sear for 1 minute. Add butter, garlic, shallots cook for another minute, flip over and baste with butter olive oil liquid for 2 mins.  Lower heat to minimum and sprinkle chili powder sea salt and pepper over buttery liquid, baste steak for 30 seconds and remove from pan. Let rest.  Sprinkle cheese in the pan, mix and cook for 30 seconds.  brush cheesy mixture over steak to serve.  Cook longer depending on how you like your meat cooked.

Thai Broth March 3rd, 2020

Recipe serves 4

  • 6 cups chicken stock
  • 3 tablespoons red curry paste
  • 1 red bell pepper, diced
  • 1 white onion, diced
  • 1/4 cup finely chopped shallot
  • 1 can coconut milk
  • 1 teaspoon apple cider vinegar 
  • 2 tablespoons chopped garlic
  • 1 tablespoon grated ginger
  • 1/4 teaspoon coriander
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 teaspoons brown sugar
  • 1 teaspoon fish sauce
  • 1 bunch thai/traditional basil, chopped
  • juice of half a fresh lime 

Method

  1. saute all vegetables in a medium pot with olive oil until fragrant
  2. stir in curry paste, vinegar, and coriander
  3. add chicken stock and coconut milk
  4. add brown sugar, fish sauce, salt, and pepper
  5. reduce until flavor to taste
  6. add lime juice.
  7. use for all things thai!
Sweet and Sour Pork March 4th, 2020

Recipe

  • 1 small pork tenderloin, cut into bite-size pieces
  • 1 green bell pepper, cut into bite-size pieces
  • 1 red bell pepper, cut into bite-size pieces
  • 3 strips bacon, fine dice
  • 2 stalks green onion, rough chop
  • 1/2 a fresh pineapple, cut into bite-size pieces
  • 1 clove garlic, finely chopped
  • 1 tablespoon fresh ginger, minced

Pork Marinade/ 2 hours min.

  • 1 teaspoon soy sauce
  • 1/2 teaspoon cornstarch
  • 1/2 teaspoon rice wine vinegar
  • salt and pepper

Frying Batter

  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1 egg
  • 1/2 cup soda water
  • 1 teaspoon olive oil
  • salt and pepper

Sweet and Sour Sauce

  • 1/2 cup ketchup
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon Worcestershire
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon rock sugar or brown
  • 2 tablespoons cold water

Method

  1. Cut pork and marinate for two hours
  2. Mix sweet and sour sauce ingredients and set aside
  3. After the pork is marinated, transfer to the batter and fry until golden brown.  Drain on a paper towel
  4. Heat up the wok and add olive oil.  Place veg in the wok and saute until bright in color.  Add pork pieces and sauce, stir-fry until coated and serve on white rice.

 

Sticky Pudding March 7th, 2020

Recipe

  • 1 3/4 cups pitted chopped dates
  • 1 teaspoon baking soda
  • 3/4 cup boiling water
  • 1/3 cup butter
  • 3/4 cup white sugar
  • 2 eggs, beaten
  • 1 1/8 cup white flour
  • 2/3 cup condensed milk
  • 1/2 cup brown sugar
  • 1/2 cup heavy cream
  • dash cinnamon
  • dash nutmeg
  • 2 oz espresso liqueur
  • 1 tablespoon vanilla

Method

  1. preheat oven to 350, grease muffin tins
  2. boil water and pour over dates, add baking soda and move to the side
  3. combine butter and white sugar, stir well
  4. beat in eggs
  5. fold in the flour to egg mixture and pour into prepared pan
  6. bake for 35 mins.
  7. combine rest of ingredients to a saucepan and cook until smooth

 

Bean Tart March 14th, 2020

Recipe

  • 1 can of Black Beans, rinsed
  • 1 small yellow onion, minced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 Anjou Pear, grated
  • 1/2 yellow pepper, small dice
  • 1/2 cup dates
  • 2 cups spinach leaves
  • 1/2 cup goat cheese
  • 1 tablespoon rock sugar
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon sage
  • 1/2 teaspoon whole coriander seeds

 

Method 

  1. Make tart shells or use frozen
  2. Place dates in 1 cup boiling water and cook until softened and blend.
  3. Saute onions, peppers, garlic, ginger, and black beans until warm to center, about 5 minutes.
  4. Transfer to a large bowl and add pureed date mixture, grated pears, and all spices. 
  5. Add spinach and mix well to wilt the spinach.
  6. Fill tart shells with bean mixture and evenly crumble goat cheese on top of all tarts.
  7. Bake in over at 350 degrees for 10 minutes.
  8. Enjoy!

 

Szechuan Beef March 14th, 2020

Recipe

  • 1 lb skirt steak, thinly sliced
  • 1/2 cup soya sauce
  • 1 tablespoon black bean sauce
  • 1 tablespoon rice wine vinegar
  • 2 tablespoon cornstarch
  • 3 tablespoon sesame oil
  • 1/2 cup beef stock
  • 1 tablespoon sriracha
  • 1/2 head of cauliflower, chopped small
  • 1/2 red onion, thinly sliced
  • 1/2 a red bell pepper
  • 2 sprigs green onion
  • 2 large carrots thinly sliced
  • minced garlic
  • minced ginger
  • rock sugar
  • ground ginger
  • garlic powder

Method (sauce)

  1. combine soya sauce, sriracha, sugar, ground ginger, garlic powder, rice wine vinegar, 1 tablespoon cornstarch, and 1/2 cup beef stock and combine in a small bowl set aside.

Method (beef)

  1. slice beef against the grain into 1/8 strips
  2. place in a bowl and add black bean sauce, sesame oil, minced garlic, minced ginger, 1 tablespoon cornstarch and marinate for 20 mins.
  3. heat up Wok and cook beef on 1 side until golden brown and veg and sauce stir-fry until vegetables are warm throughout!

 

Coconut Cream Pie March 17, 2020

Recipe  (crust)

  • 2.5 cups white flour
  • 1 cup chilled butter
  • 2 tablespoons white sugar
  • 1 tablespoon salt
  • 1/4 ice water

Method

  1. combine flour, salt, sugar, and flour until rolled oat consistency
  2. add water until blended, roll out on a floured service and rest for 1 hour
  3. blind bake at 400 degrees for 15mins.
  4. rest

Recipe (custard)

  • 4 eggs
  • 1/4 cup cornstarch
  • 1 cup white sugar
  • 1 can coconut milk
  • 3/4 cup half and half cream
  • 2 tablespoons butter
  • 1 cup unsweetened coconut, toasted
  • 1 teaspoon salt
  • 1 tablespoon vanilla extract
  • 1 tablespoon coconut extract

Method

  • combine 4 egg yolks and cornstarch in a separate bowl, set aside
  • in a medium pot bring coconut milk, cream, and sugar to boil
  • lower heat to low, add vanilla extract, coconut extract, and butter, stir
  • remove half a cup of hot liquid and add to egg cornstarch mixture, stir well to blend
  • add egg mixture to the pot with rest of liquid in it and whisk well over low heat for 1 minute
  • pour the liquid into the cooked shell and cool for three hours in the fridge

*whip cream topping is completely up to you.  2 cups 33% cream, 1/4 powdered sugar, 1 teaspoon coconut extract, whip until hard peaks

 

 

Sheperd's Pie March 10th, 2020

Recipe serves 4

Beef Mixture

  • 2 lbs ground beef
  • 2 large carrots, diced
  • 1 yellow onion, diced
  • 2 stalks celery, diced
  • 1 clove garlic, minced
  • 1 leek, minced
  • 2 tablespoons Worcestershire
  • 1/2 cup chicken stock or beef
  • 2 tablespoons tomato paste
  • dash chili powder
  • 1 tablespoon fresh thyme, minced
  • 1 cup of frozen organic peas
  • salt and pepper to taste

Mashed Potatoes

  • 4 large russet potatoes
  • 2 tablespoons butter
  • 1/2 cup whole cream
  • 2 tablespoons minced garlic
  • dash of favorite hot sauce
  • salt and pepper to taste

Method

  1. (beef) saute beef until browned, add vegetables and cook until translucent.
  2. add spices and stalk, reduce until thickened.
  3. set aside
  4. (mashed potato) boil potatoes until soft, strain.
  5. using the same pot, add butter, cream,  garlic, and hot sauce.
  6. bring to boil and turn off the heat, add salt and pepper.
  7. put potatoes back in the pot and mash away until blended.
  8. in a baking dish add beef and spread mash potatoes evenly, bake until lightly browned.
Chicken Soup March 18th, 2020

Recipe

  • 6 cups chicken stock
  • 1 tablespoon sriracha
  • 1/2 white onion, diced
  • 1/2 a yellow bell pepper, diced
  • 2 sprigs green onion, chopped
  • 2 large carrots, diced
  • 2 stalks celery, diced
  • 1 tablespoon ground ginger
  • 1 tablespoon garlic powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cayenne
  • 1 tablespoon coriander
  • salt and pepper to taste
  • 1 organic chicken breast
  • spinach for garnish

 

Method

  1. Saute all vegetables in olive oil until translucent.
  2. add all spices and herbs
  3. add chicken and stock bring to a boil and drop to low heat to simmer for ten mins.
  4. serve

 

Lemon Meringue March 21, 2020

Cake Batter  (crust)

  • 1 cup white sugar
  • 1/2 cup butter
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon salt
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk

Method

  1. combine eggs, sugar, and butter, whip
  2. mix all other ingredients until fluffy
  3. bake at 350 degrees for 30 mins.
  4. rest

Recipe (custard)

Chef D's Pizza Crust March, 2020

Recipe (serves 2 large pizza)

  • 3 and a half cups white flour 
  • 1 tablespoon olive oil
  • 1 tablespoon of sea salt
  • 1 tablespoon of white sugar
  • 1 tablespoon garlic powder
  • 1 tablespoon dry oregano
  • pinch of paprika
  • 2 tablespoon yeast
  • 1 cup 90-degree water

 

Method

  1. In a stand-up mixer or bowl place yeast, sugar, salt, and water, allow the mixture to sit until you see a light foam on top.
  2. Add olive oil, oregano, garlic powder, and paprika to the yeast mixture.
  3. Add 1 cup of white flour and mix on low until blended.
  4. Keep adding flour by half-cup increments until the dough comes together.  should be soft and fluffy but slightly sticky.
  5. Turn on to a floured surface and knead in the remaining dough until soft and no longer sticky.
  6. Place a warm towel over the dough and let rise for 30 minutes.
  7. Punch down and let rise again for 30 minutes.
  8. Roll out dough and enjoy it!
Chef D's Apple Coffee Cake March, 2020

Recipe (cake mix)

  • 1 1/2 cups all-purpose flour
  • 1/2 cup Demera (dark) brown sugar
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon cardamom
  • 1 teaspoon dried vanilla bean
  • 1/4 baking soda
  • 1/4 teaspoon sea salt
  • 3/4 cup whole milk
  • 1/3 cup canola oil
  • 2 large eggs
  • 1 large fuji apple, grated

Crumble mix

  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 1 tablespoon molasses
  • 1 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 1/2 cup melted butter
  • 1 1/2 cups whole grain flour or white

 

Method

  1. Set oven at 375 degrees
  2. (Cake mix) combine all ingredients in a stand-up mixer and blend until smooth.
  3. Pour cake mix into a 9-inch baking pan lined with parchment.
  4. (Crumble mix) combine all ingredients in a medium bowl until a smooth mix.
  5. crumble mixture on top of cake mixture and bake for 20 minutes.
  6. Enjoy!

 

Chef D's Wing Sauce March, 2020

Recipe

  • 1/2 cup soya sauce
  • 1/4 cup brown sugar
  • 1 tablespoon maple syrup
  • 1 tablespoon chopped garlic
  • 1 tablespoon chopped ginger
  • 1/2 cup water
  • 1 teaspoon cornstarch
  • 2 tablespoon Sambal Oelek
  • salt and pepper to taste

Method

  1. In a small pot combine, soya sauce, water, and brown sugar.  Simmer until brown sugar is dissolved.
  2. Add maple syrup, garlic, ginger and simmer on medium heat for 5 minutes.
  3. Make a slurry with the cornstarch (eg. add cornstarch and tablespoon of water together and mix).
  4. Add the slurry to the soya sauce mixture and stir until thickened.
  5. Remove from heat and add all remaining ingredients.
  6. Enjoy your new hot sauce!

 

 

Chef D's Quinoa Patties March, 2020

Recipe 

  • 1 cup quinoa
  • 2 cups chicken stock
  • 3 cloves of garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 pearl onions, minced
  • 2 tablespoons fresh mint
  • 1 teaspoon paprika
  • 1 teaspoon coriander
  • 1 teaspoon pepper
  • 1 teaspoon ginger
  • two leaves of washed and rinsed kale, chopped
  • salt to taste
  • 1 tablespoon baking soda
  • 3/4 cup flour
  • 1 egg

 

Method

  1. dry heat quinoa in a medium pot
  2. add ginger, garlic, and onion to quinoa
  3. add mint and stir
  4. add chicken stock and spices
  5. bring to boil and reduce heat to low and simmer lid on for 15 mins.
  6. empty cooked quinoa in a large mixing bowl
  7. add chopped kale to a bowl and mix to wilt the kale
  8. add salt to quinoa mixture
  9. add baking soda, flour, and stir until mixture comes together
  10.  scramble 1 egg and mix into quinoa mixture
  11. in a large skillet pour a tablespoon of olive oil bring to heat
  12. add a large spoonful of quinoa mix into the pan making a 3inch by 3inch size patty. Fry on both sides until golden brown.

Chef D's Breakfast March, 2020

Method

A simple and healthy breakfast idea

  1. Re-heat quinoa patties in the oven at 375 degrees for 10 minutes ( see quinoa patty recipe)
  2. fry one egg
  3. wash and rinse fresh greens to have alongside
  4. serve together for a healthy energy inspired breakfast 

 

Chef D's Crusted Sirloin March, 2020

Recipe (2 10oz sirloins)

  •  1 tablespoon coriander seed, crushed
  • 1 tablespoon paprika
  • 1 tablespoon turmeric
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon cinnamon
  • 1/2 tablespoon black pepper
  • 1 tablespoon sage
  • 1 tablespoon dijon mustard
  • 1 tablespoon olive oil

Method

  1. Mix all ingredients in a bowl and pour over Sirloin Steaks
  2. marinate for 1 hour in the refrigerator
  3. before pan-frying or grilling steak make sure it is at room temperature or it will not cook evenly.
