Twisted Dishes Cooking

With an extensive background in the culinary world, Devin began his cooking career at the tender age of 6, where he made his first fresh blackberry tart for his mom. “he used to pick blackberries, ripe or not, from the bushes that grew along the side of the back alley.” Frozen tart shells in one-hand and some white sugar in the other and away he went, thus began his first culinary creation. “You know its funny, I’m pretty sure I enjoyed eating more than actual cooking, Devin says.”  After acknowledging his passion for food and how it made him feel he soon started working in many local restaurants after school and longer shifts on the weekends in the respected “dish pit”.  It did not take long from there to see him working in some of the most respected restaurants around Vancouver, Canada.

  Hy’s Encore, Gotham to name just a few.  “Oh yes Gotham, Devin tells us; I would have over 100 steaks at a time on our double pull-out grill.  the average steak cost 65.00 dollars and had to be cooked perfectly every time.”  He was soon recruited to four-star Hy’s Whistler where he took charge of the signature kitchen, getting a chance to do his own Menu for the high profile event Cornucopia. “Cornucopia was basically the top Chefs in Whistler representing their restaurant brand with their own developed menu for the night.”  The winner was invited to dinner with the previous year’s winners. “I decided not to go having my newborn daughter (Abby) at home.” He soon found the Westin Whistler which drew an A-list celebrity crowd.  “Many functions at the Westin Whistler were private; he says, I took on some pretty high profile people and had fun doing it.”

  He took it back to his roots moving to Vancouver Island, BC where he opened his flagship restaurant Twisted Dishes Cafe.  But three years later and 6 years worth of hours in he decided to sell the five-star ranked restaurant.  “I loved having it, but it was just too many hours, I wasn’t at home with the family much, and I’m quite a family guy.
